Ingredients: - 1 bag frozen Mediterranean veg, I recommend Tesco as it has a bit of seasoning on already!; - 2 tablespoon Cajun seasoning; - 1 tablespoon garlic granules; - Sprinkle of mixed herbs (optional); - 250ml water; - 350g macaroni; - 700-750ml milk; - 2 tablespoon light mayo (optional); - 150g grated cheese and extra to sprinkle on top (I used a mix of mozzarella and cheddar); Crispy bacon medallion bits, just popped them in the airfryer for about 10 minutes and chopped them up

Slow Cooker Mac and Cheese… but packed with your 5 a day!! 🧀🫑🧅❤️ I made a big slow cooker full of this today as meal prep for the rest of the week as it’s a really good way to pack in lots of veg in a yummy and comforting way in this cold weather 🌧️ hiding veg in meals like this is also such a good idea if you are or live with anybody who struggles to eat enough veg, you really can’t taste it but end up getting all those extra vitamins and minerals that we need in these colder months!

Crispy, medallion, just popped them in the airfryer for about 10 minutes and chopped them up

Instructions

Step 1

Add your packet of veg, seasoning and water to your slow cooker and cook on high for 1-2 hours until soft. You can skip this and microwave them if you want to

Step 2

When the veg is soft, blend with a hand blender for a few minutes until soft

Step 3

Add your dry macaroni and milk and stir well, leave on high for 1 hour or until the pasta is soft. Make sure to keep stirring and add more milk if needed

Step 4

When the pasta is soft, stir in your grated cheese and mayo, top with some extra cheese and place under the grill until it is crispy on top. While it was under the grill I popped some bacon in the airfryer for a little protein boost but you could also serve with chicken, fish or tofu☺️
