Chorizo and Red Pepper Risotto
Chorizo and Red Pepper Risotto - everything you want a rice dish to be, creamy and salty at the same time and packed with flavour !🧡
Serves 2
INGREDIENTS
1 Onion (2 shallots)
6 Cloves Minced Garlic
2 Diced Sweet Red Peppers
200 Grams Chorizo
400 Grams Risotto Rice
1.2 Litre Beef Stock
80 Ml Double Cream
Parmesan Rind (80 Grams Grated Parmesan)
METHOD
Start by cooking your onions and garlic, you want these to be really soft and translucent. After this, throw in your red pepper and chorizo and allow this to cook for a little bit until the pepper is soft and chorizo is releasing some oils.
Add your risotto rice along with your stock, cream and parmesan. Let this cook for 8-10 minutes until the rice is cooked but still has a bite.
Serve and enjoy!
