Instructions

Step 1
Preheat oven to 425°F (220°C).
Step 2
Toss the Brussels sprouts (and optional vegetables) with olive oil, salt, pepper, and half of the minced garlic. Spread them on the sheet pan and roast for 15-20 minutes until they start to crisp and brown.

Step 3
While the Brussels sprouts are roasting, toss the shrimp with a bit of olive oil, the remaining garlic, lemon zest, salt, pepper, and red pepper flakes if using.

Step 4
After the Brussels sprouts have started to brown, add the shrimp to the pan and roast for another 5-8 minutes until the shrimp turn pink and are cooked through.
Step 5
Squeeze fresh lemon juice over the pan and garnish with parsley before serving.

Garlic Lemon Butter Sauce

Step 6
In a small saucepan, melt the butter over low heat. Add the minced garlic and sauté until fragrant.

Stir in lemon juice, zest, salt, and pepper. Drizzle over the shrimp and veggies after roasting, then sprinkle with fresh parsley.
