Instructions

Step 1
In a pot, bring the vegetable broth to a boil.

Add potatoes, carrots and leeks
Step 3
Cook for about 15 minutes until vegetables are tender

Add sliced sausage and cream, and simmer for another 5 minutes
Step 5
Season with salt and pepper
Step 6
Garnish with parsley and serve hot

This soup tastes even better the next day as favours meld together.
