Quick Chicken and dumplings from scratch

Instructions

Step 1
Add the butter to a large kettle over medium heat. Add in the vegetables and cook till just about tender. If you're cooking and preparing at the same time Add the vegetables in this order - carrots, celery, garlic, onion. Stir occasionally while cutting up the chicken
Step 2
Add the chicken to the almost tender vegetables, add in all the seasonings, salt and pepper. Cook till very little pink is visible on the chicken.
Step 3
Add in the bouillon and 8 cups of water. Turn the temperature up to med-high and bring to a boil.
Step 4
While the soup is boiling make the dumpling dough. In a medium bowl mix together the flour and baking powder. In a 1 cup liquid measuring cup measure out 1/2 c milk and 1/2 c heavy cream together and stir it into the flour mixture. Once it becomes a big glob of goo you're good to go!
Step 5
Check that the chicken is thoroughly cooked. Turn the temperature down to medium and add in globs of the dumpling dough in chunks as big or small as you like. I like them big and cut them up in my soup bowl. You can dip your spoon in the hot soup and use the hot spoon to scoop out the dough and it'll slide right off the spoon into the pot.
Step 6
Turn the heat off but let it continue cooking just a couple minutes while you grab out bowls and spoons and gather everyone around the table for dinner. Very filling and so delicious!!
