Tuna-Cabbage Salad

3 Tbspcanola oil

3 Tbspfresh lemon juice

3 Tbspmayonaise
conforming, the original--and best--mayonaise is made only from olive, or canola oil, eggs, and maybe some lemon juice and mustard buying ready-made, try to find a product that conforms as closely as possible to these ingredients

3cloves garlic
crushed

freshly ground black pepper
to taste

3green onions
finely sliced

0.75 poundtomatoes
medium, chopped

3pickled cucumbers
medium, thinly chopped

2 x 4.5 oztuna in brine
cans, drained

1 canblack sliced olives
rinsed and drained

1 poundwhite cabbage
shredded, coleslaw, may be substituted by a whole cabbage, suitably shredded

3 Tbspfresh parsley
chopped
Instructions
Step 1
Vinaigrette: place all the ingredients in a medium-sized mixing-bowl and, with an electric hand mixer, blend until smooth, scraping down the sides of the bowl as necessary. Transfer the vinaigrette into a large salad bowl.







Step 2
Mix the green onions, tomatoes, cucumbers, tuna, and olives. Add the cabbage. Salt and pepper to taste and toss well.






Step 3
Prior to serving, mix in the parsley.
