Easy Apple Pie

Instructions
Step 1
In a small bowl, soak the raisins in hot water for about 10 minutes. Drain the raisins, add the rum and mix well. Set aside.



Step 2
Spray a medium-size frying pan with the olive oil and saute the apples until they are tender, but not mushy. Stir in the raisins an sweeten with xylitol to taste.




Step 3
Meanwhile, to prepare the dough, beat the eggs with an electric hand mixer in a medium-sized bowl. Add all the dough ingredients and blend to obtain a smooth, albeit liquid mixture.









Step 4
Spray a round pie dish (about 8-inch diameter) with the olive oil and spread out a small part of the dough mixture in a thin layer (just to cover the bottom of the dish).


Step 5
Bake in a hot oven at 340 degrees F (170 degrees C) for about 7 minutes to set the dough. Allow to cool for a few minutes.
Step 6
Lay out apple slices in concentric circles on top of the dough. Flatten the fruit with a fork, but keep the edges of crust free.
Step 7
Spread the remaining dough mixture equally over the apples.
Step 8
Return the pie to the hot oven and bake at 340 degrees F (170 degrees C) for about 25 minutes. Check for doneness.
Step 9
Allow the pie to cool down. De-mold by putting a serving plate on top of pie and turning the whole lot over. Then lift off the mold, so that the nicely formed underside of the pie is on top.
