Instructions
Step 1
Preheat the oven to 425
Step 2
Slice brussels sprouts in half
Step 3
Roast 20 to 30 minutes or until tender and golden brown around the edges
Step 4
Prepare Quinoa according to package
Step 5
Wash and peel sweet potatoes; cut into small cubes
Step 6
Bake sweet potatoes for 30 minutes (also at 425) tossing them every 10 minutes, cooking until tender and crisp.
Step 7
Assemble all salad ingredients into a bowl
Step 8
Drizzle with dressing and Enjoy!
