1. Sauté Vegetables: Heat the oil in a small saucepan over medium heat. Add the onion and carrot, and cook, stirring occasionally, until softened, about 2-3 minutes.

2. Add Potato and Water: Add the potato and 2 cups of water to the pan, and bring to a boil.

3. Simmer: Reduce heat to low, cover, and simmer for 10-15 minutes, or until the potato is tender.

4. Add Curry Mix: Add half a package of S&B Golden Curry Mix to the pan, stirring until the mix has completely dissolved into the liquid.

5. Add Milk: Pour in the 1/2 cup of milk, stirring to combine. Allow the curry to simmer for another 2-3 minutes, until it reaches your desired consistency.

6. Serve: Pour the curry over rice or enjoy it on its own.
