Teriyaki Tofu Teppanyaki Bowl
WHERE’S MY PROTEIN EP. 1 - TERIYAKI TOFU TEPPANYAKI BOWL 🍚
Welcome to episode 1 of my new series Where’s my Protein. I’ve kicked things off with a simple tofu dish that is packed full of protein. This dish in itself has 37 grams of protein in one portion. Which for a lunchtime meal is loaded.
Ingredients
Half a block of extra firm tofu
2 spring onions
3 cloves garlic
1 thumb piece ginger
Half a punnet of chestnut mushrooms
3 tbsp teriyaki sauce
1 tbsp soy sauce
1 tbsp maple syrup
1 tsp chilli powder (gochujaru)
Serve with rice sesame seeds and edamame

Instructions
Step 1
Start by slicing your tofu into thin cubes, fry off in some veg oil until golden brown on either side, then take out the pan and set aside.
Step 2
2. In the same pan fry off the spring onions, garlic and ginger until fragrant. Then add in the mushrooms and fry for another few minutes then go back in with the tofu.
Step 3
3. Mix together the teriyaki, soy sauce, maple syrup and chilli powder and then pour into the tofu and veg, and let sizzle away and reduce.
Step 4
4. Serve with rice, edamame beans and sesame seeds and enjoy!
