2 teaspoonsginger
minced

4garlic cloves
minced

2serrano peppers
finely chopped

3 cupsfrozen spinach
thawd

1 cuptomato
chopped

2 teaspoonsgaram masala

4bay leaves

1 ½ teaspoonssalt

2 cupswater

lemon juice
as needed

Crushed red pepper flakes
as needed

Fresh cilantro
as needed, chopped

2 cupslong grain rice

2 teaspoonsvegetable oil
Instructions
Step 1
Rinse the race, then soak in warm water to cover for at least fifteen minutes while you begin the recipe.
Step 2
Put oil in the instant pot and tilt the pot to coat the bottom.
Step 3
Add the ginger, garlic, serrano pepper, spinach, tomato, garam masala, bay leaves, salt, and water.
Step 4
Drain the rice, add it to the pot and give it a good stir.
Step 5
Pressure cook on high for 5 minutes. When the time is up, allow for 8 minutes natural release, then carefully quick release the rest of the pressure.
Step 6
Open the lid and fluff the rice.
Step 7
Remove the inner pot (to keep the rice from continuing to cook) or transfer the rice to a serving bowl.
Step 8
Garnish with lemon juice, red pepper, flakes and cilantro.
