Ingredients
8 servings
1 ½ cupsalmonds
sliced
½ cupextra virgin olive oil
2 tablespoonsdry harissa
preferred 1/4C paste
1yellow onion
medium, diced
2.5 lbcauliflower
trimmed & chopped into ~1” cubes
1 Tbspkosher salt
7 cupswater
¼ cuplemon juice
fresh cilantro almond oil harissa

Instructions
Step 1
Heat olive oil, harissa & almonds til the oil froths up. Remove 1/2 cup for garnish, then add onion, stir, & cauliflower. Stir to coat & cook till the cauliflower softens a bit (8min or so) stirring often. Then add water & salt, bring to a brisk simmer; cover & cook till the cauliflower is very soft ~ 20 min or so. Purée. Add the lemon juice & more salt if needed. Serve with cilantro & almond harissa oil mixture
