Dough

2 ⅓ cupsunbleached all-purpose flour
plus more for dusting

½ cupwater
cold

¼ cupvegetable oil

1egg

½ teaspoonfine sea salt
Filling

1russet potato
peeled and chopped

1onion
large, diced

2 ouncescream cheese
or goat cheese

2 Tbspolive oil

Instructions
Step 1
Make the dough: Place all the dough ingredients in a food processor. Pulse until the dough comes together. Transfer the dough to a lightly floured surface. Knead, using the palm of your hands, until the dough becomes smooth and elastic, about 3 minutes.
Step 2
Wrap in plastic wrap and let it rest in the fridge for 1 hour.
Step 3
Make the filling: Bring a pot of salted water to a boil and cook the potato for 7 to 10 minutes, until fork-tender. Drain and allow to cool slightly.
Step 4
When the potato has cooled a few minutes, mash.
Step 5
Heat 1 to 2 tablespoons of the olive oil in a pan over medium heat. Sauté the onion until translucent, 5 to 8 minutes. Add a pinch each of salt and pepper.
Step 6
Combine the onion, mashed potato, remaining tablespoon of olive oil, cream cheese, and 2 tablespoons everything bagel spice
Step 7
Preheat the oven to 375°F.
Step 8
After the dough has rested, divide into two equal pieces and roll out each piece into a rectangle around 13-16 inches long and 6-8 inches wide. Maybe approx 1/4in thick or a wee bit less. The dough might keep bouncing back, so just keep rolling and know this is normal.
Step 9
Shape the filling into a log along one long end of the dough. Roll up the dough until you form a log
Step 10
Cut each log into about 6 pieces. Place the knishes on a baking sheet lined with parchment paper. Brush each knish with the beaten egg.
Step 11
Bake for 25 to 30 minutes, until just golden. Do an additional egg wash halfway through and top with additional everything bagel spice.
