Instructions
Step 1
Preheat oven to 175 °C and line baking tray with non-stick baking paper
Step 2
Whisk plain flour, baking soda, baking powder and salt together in a bowl
Step 3
In a separate bowl, cream the butter and sugars until light and fluffy. Then add the eggs, cinnamon and nutmeg and then whisk the mixture until all incorporated.
Step 4
Add the flour mixture to the butter mixture in thirds and fold it all in
Step 5
Finally add the chocolate and walnuts then fold it in. Then cover and refrigerate the cookie dough for an hour (or up to 72 hours) before using it.
Step 6
After refrigerating the cookies, take them out and roll into 60-70 g balls then place onto the baking tray and bake the cookies for 12-14 minutes until light brown on the edges and soft in the centre
Step 7
Take out of the oven and use a cookie cutter to smooth out the sides, topping with some flaked sea salt. Let cool completely in the baking tray before removing and eating
