Lighter Scalloped potatoes and ham

Delicious, lighter version of one of my favorite comfort foods. Made lighter by using it less cheese and butter and by using skim milk and whole wheat flour.

Step 1
Preheat oven to 375°Spray olive oil in skillet add onions and cook until translucent add garlic and add ham cook 1 minute. Remove ham and onions from pan Add butter When it melts Add flour and cook 1-2 minutes. Until paste forms. Start adding milk 1/4 c at a time whisking until smooth. Continue adding milk until all combined then add broth . Add 1t thyme salt and pepper and bay leaf. Turn down heat and let simmer very gently. Layer 1/3 of potatoes on bottom of 8x8 pan top with 1/3 onion and ham mixture 1/3 cheese then 1/3 cream sauce. Repeat layers. Cover with foil and bake for 40 minutes. Remove foil the bake another 20 minutes Remove from oven and let rest 10 minutes before cutting.
