450 gramsCavatappi Pasta
Boiled in Salted water, 1

450 gramsmozzarella cheese
shredded

450 gramsColby jack cheese
shredded

230 gramsSharp cheddar cheese
shredded

1 teaspoonsalt

½ teaspoonblack pepper powder

1 tablespoongarlic powder

1 tablespoonsmoked paprika

3 tablespoonsbutter

3 tablespoonsflour

360 Millilitersevaporated milk

1 tablespoondijon mustard

2 cupsheavy cream

Instructions
Step 1

Boil the pasta in salted water on medium heat for 8 minutes after that strain the water out






Step 2

Mix the spices together in a separate bowl. After putting the butter in the pan let it melt then put half of the spice mix, mix and stir it for 30 seconds until it all mixes evenly. Add the flour and mix very well for about 2-3 minutes or until it all mixes and no chunks or flour bits are left so it isn’t grainy.






Step 3

Add quarter of the can of evaporated milk and mix well and then Add quarter of the can of evaporated milk and mix well and then repeat this until you finished the can of evaporated milk. After u finished the can mix for a minute then add the Dijon mustard and mix well. Then slowly add the heavy cream until you finished 1 cup and mix well. Then continue adding the heavy cream slowly and mix well. Let it cook for 2 minutes.



Step 4

Mix all the shredded cheeses together and separate the cheese mix in halves. Slowly add a handful at a time and mix on low heat let the cheese melt then add another handful and repeat this until you have finished the half of the cheese mix. Then add the rest of the spice mix and mix. Until melted cheese forms.







Step 5

Add the strained pasta into the cheese mix and fold it in together. Mix it all together until the pasta is coated with the cheese mix.





Step 6

Add half of the Mac n cheese into a baking dish spread it out and add the last half of the cheese and take half of it and put it on top then put the last half of the Mac n cheese on the top and put the rest of the cheese mix on top until all the pasta is fully coated.


Step 7

Finally place it into the oven until all the cheese on top is melted so 25-30 minutes after that let your Mac n cheese broil for 2 minutes with supervision so it doesn’t burn so it could have a nice crunchy cheese crust on top. Take it out and let it cool down for 3 minutes and then decorate with chopped chives on top.
