Pork Belly Stirfry

This Pork Belly Stirfry is pretty much a Bahn Mi in a bowl! It's simple to make and worth it!

Instructions
Step 1
Preheat oven to 180°C.
Step 2
Pat down Pork Belly with paper towel until dry and put 1 teaspoon of Extra Virgin Olive Oil on Pork Skin and rub in oil. Pour salt on Pork Skin and rub in until fully covered in salt.
Step 3
Place Pork Belly on a large deep tray and place in oven. Set timer to 1 Hour.
Step 4
While Pork Belly is in oven, chop and dice Vegetables. Once 30 minutes is left on timer for the Pork Belly, grab a deep pan or wok and heat up pan on stove. While pan is heating up grab a saucepan and fill with water and place on stone on high heat and pour 2 cups of Rice of your choice.
Step 5
Once pan is hot enough, pour in 1 teaspoon of Extra Virgin Olive Oil and throw in your diced Vegetables. Cook until Vegetables are soft and are cooked properly and add a generous amount of Salt and Pepper and 1/2 cup of Hoisin Sauce. Stir around everything in pan or wok and constantly stir the Rice.
Step 6
Turn off heat on pan or wok with Vegetables and once Rice is cooked, turn off heat, pour Rice in strainer in sink and wash thoroughly to eliminate starch.
Step 7
Once Pork Belly is cooked and you have beautiful crackling on top of Pork Belly, place on chopping board and dice Pork Belly into cubes. Once Pork Belly is chopped, throw into pan or wok with Vegetables, turn heat back on low and stir thoroughly. When Pork Belly and Vegetables stirred properly and hot enough, grab bowl or plate and serve Rice and then your Pork Belly Stirfry and a garnish of Coriander on top, and Enjoy!
