Step 1
Preheat oven to 425F Combine floor, eggs, milk, flour, sugar and nutmeg in a blender and blend smooth. Alternatively, mix by hand. Place butter in heavy 10inch skillet or baking pan and place in the oven. As soon as butter has melted (watch so it doesn’t burn) add the batter into the pan, return pan to oven. Bake for 20 minutes until pancake is puffed and golden. Lower temperature to 300F and bake for 5 minutes. Remove and cut into wedges. Serve with whipped cream, fruit, preserves, confectioners sugar or cinnamon and sugar.
