Chicken marinade
2chicken breasts
thinly sliced
1 cupcoconut milk
2 tablespoonsred curry paste
1 tablespoonfish sauce
1 teaspoonsoy sauce
Noodle bowl
8 ozrice noodles
0.5cucumber
julienned
½ cupcarrots
shredded
Fresh herbs
cilantro, mint, Thai basil
¼ cuproasted peanuts
chopped, optional
Peanut sauce
⅓ cuppeanut butter
1 tablespoonsoy sauce
1 tablespoonlime juice
1 tablespoonhoney
¼ teaspoongarlic powder
¼ cupwater
warm, to thin sauce
Instructions
Step 1
1. Marinate the chicken:

• Mix coconut milk, red curry paste, fish sauce, and soy sauce in a bowl. Add the sliced chicken and marinate for 1-2 hours in the fridge.

2. Cook the chicken:

• Heat a grill pan or skillet over medium-high heat. Cook the chicken slices for 3-4 minutes per side until fully cooked and lightly charred. Set aside.

• Cook rice noodles according to package instructions. Drain and rinse with cold water to prevent sticking.

• Whisk together peanut butter, soy sauce, lime juice, honey, garlic powder, and water until smooth. Adjust consistency by adding more water if needed.
