1 packagechicken tenderloins

1 x 14 ouncecan unsweetened coconut milk
shaken, or whisked to fully combine

⅓ cupfresh lime juice

1 tablespoonolive oil

1 tablespoondried cilantro

1 teaspoongarlic powder

1 teaspoonkosher salt

½ teaspooncrushed red pepper flakes
Peanut sauce

¼ cuppeanut butter

1 Tablespoonsesame oil
+ 1 teaspoon

¼ cupsoy sauce

¼ cuplime juice

1 ½ teaspoonsgarlic powder

1 tablespoonsriracha

1 tablespoonhoney
+ 1 teaspoon

½ teaspoonkosher salt
Lettuce wraps and toppings
Instructions
Chicken
Step 1
Mix together all marinade ingredients and marinate chicken for at least 30 minutes.
Step 2
Grill chicken until it reaches an internal temperature of 165 degrees.
Step 3
Rest chicken for a couple minutes
Peanut Sauce
Step 4
Whisk all peanut sauce ingredients until well combined
Lettuce Wraps
Step 5
Place chicken pieces onto lettuce wraps.
Step 6
Top with cucumber salad, shredded carrots and fresh cilantro.
Step 7
Drizzle with peanut sauce and sprinkle with sesame seeds. Serve immediately
