Instructions

Dough

Step 1
Mix all-purpose flour and whole wheat flour with salt, and crumble the butter into the flour mixture. Alternatively, this can be done in a food processor.
Step 2
Bring the dough together with water and let it rest in the refrigerator for 30 minutes.
Step 3
Press the dough into a greased tart pan with a 24 cm diameter, and poke holes in the dough with a fork.
Step 4
Pre-bake the dough in a preheated oven at 175°C (fan-forced) for 10 minutes, after which it will be ready to be filled and baked.

Filling

Step 5
Fry the bacon until crispy in a pan, then remove from the heat and set aside.
Step 6
Melt butter and olive oil in the same pan over high heat and sauté the mushrooms, stirring constantly, until golden.
Step 7
Lower the heat to medium, add the onions, and sauté until soft.
Step 8
Whisk the eggs with thyme, crème fraîche, heavy cream, salt, and pepper.
Step 9
Chop the bacon into smaller pieces and mix it with the mushrooms, onions, and grated cheese into the filling mixture.
Step 10
Pour the filling into the pre-baked tart crust and bake the tart in the oven at 175°C (fan-forced) for about 35 minutes, until the tart is firm and golden.
Step 11
Serve with a sprinkle of fresh thyme.
