Instructions
Step 1
Preheat oven to 375°F (190°C).
Step 2
Heat olive oil in a skillet and sauté spinach and mushrooms until tender.
Step 3
In a baking dish, layer zucchini strips, marinara sauce, ricotta, and the spinach-mushroom mixture. Repeat layers.
Step 4
Top with mozzarella if desired. Bake for 25 minutes until bubbly.
