Instructions
Step 1
Cook the rice.
Step 2
Preheat your oven to 375°F (190°C). Grease a medium-sized baking dish (8x8 inches works well) with butter or non-stick spray.
Step 3
Prepare the turkey and veggies. Shred or cube the turkey breast into bite-sized pieces. If using frozen broccoli, thaw it slightly (microwave for about 2 minutes) and pat it dry.
Step 4
Mix the base ingredients. In a large mixing bowl, combine:
2 cups cooked rice
1 lb turkey
1 ½ cups broccoli
1 cup gravy or broth
½ cup mushrooms (if using)
Sprinkle in ½ tsp garlic powder, ½ tsp onion powder, and a pinch of salt and pepper. Stir until everything is evenly combined.
Step 5
Layer the mixture into the baking dish. Pour the rice-turkey mixture into the greased baking dish and spread it out evenly.
Step 6
Top with cheese. Sprinkle ½ cup grated parmesan (or more if you’re a cheese lover) over the top.
Step 7
Bake. Place the dish in the oven and bake for 25-30 minutes. The casserole is done when the cheese is melted and slightly golden, and the mixture is bubbling at the edges.
Step 8
Let it rest and serve. Remove from the oven and let the casserole rest for 5-10 minutes to set. Serve warm with a side salad or additional veggies if desired.
