Instructions
Step 1
Start with generously seasoning chicken breasts with salt, pepper, garlic powder, cayenne pepper, red pepper flakes, thyme, oregano, and dried basil. Coat chicken completely in seasoning.
Step 2
Finely dice a large shallot. Crush and roughly chop garlic.
Step 3
Add a generous amount of olive oil to a pot over medium heat. Lay chicken in pot and cook fully. Remove chicken and chop or shred it.
Step 4
Once chicken is removed, add more olive oil to pot with garlic and shallot. Cook for a few minutes, then add tomato paste with sundried tomatoes. After a few mins, add chicken stock.
Step 5
Cook for about 15min, then add heavy cream and cheese. Simmer for approx 20 more mins.
Step 6
Add butter, gnocchi, and spinach.
