Ingredients

1 tablespoonolive oil

1 poundItalian sausage
casings removed

1onion
small, diced

2 clovesgarlic
minced

1 x 14.5 ozcan diced tomatoes
drained

6 cupschicken broth

1 cupheavy cream

1 cupditalini pasta
or elbow

1 cupshredded Parmesan cheese

½ teaspoondried basil

½ teaspoondried oregano

Salt

pepper
to taste

Fresh parsley
chopped, for garnish

2celery stalks
diced
Instructions
Cook the Sausage
Step 1
In a large pot, heat olive oil over medium-high heat.

Step 2
Add the sausage and cook until browned, breaking it into crumbles.
Step 3
Remove and set aside.
Sauté Vegetables
Step 4
In the same pot, add the onion, garlic, carrots, and celery
Step 5
Sauté for 5–7 minutes, or until softened and fragrant
Add Broth and Tomatoes
Step 6
Stir in the chicken broth, diced tomatoes, Italian seasoning, and red pepper flakes (if using)
Step 7
Season with salt and pepper to taste
Simmer the Soup
Step 8
Return the cooked sausage to the pot and bring the mixture to a boil
Step 9
reduce the heat and simmer for 20 minutes
Add Pasta (Optional)
Step 10
If using pasta, add it to the soup and simmer until tender, about 8–10 minutes
Stir in Cream and Cheese
Step 11
Reduce heat to low and stir in the heavy cream and Parmesan cheese until well combined
Finish with Greens
Step 12
Add kale or spinach to the pot and cook for 2–3 minutes, or until wilted
Serve
Step 13
Ladle the soup into bowls and serve hot.

Garnish with extra Parmesan cheese if desired.
