Instructions

Step 1
Fry onions till soft and translucent. Add chicken and garlic and stir well. Mix in spices, stir and cook for a few minutes before adding the orange zest and juice, honey and salt and pepper. Cook for 5 minutes, stirring occasionally.
Step 2
Pour over enough boiling water to just cover the ingredients, reduce to gentle medium heat and cook uncovered for 1.5 hours, stirring occasionally. Stir in cried apricots and cook a further 30 minutes.
Step 3
Toast almonds in 220c oven for 8 minutes. Leave to cool
Step 4
When the tangine is ready, serve scattered with almonds and parsley.
