Instructions
Step 1
Preheat oven to 375°F (190°C). Lightly grease a baking dish with olive oil.
Step 2
Heat tortillas briefly in a skillet to make them pliable.
Step 3
In a bowl, mix 1 cup cheese, spinach, and black beans.
Step 4
Place a small amount of the mixture in each tortilla, roll tightly, and place seam-side down in the baking dish.
Step 5
Pour enchilada sauce over the rolled tortillas and top with remaining cheese.
Step 6
Bake for 20 minutes until bubbly and golden. Serve hot.
