Step 1
Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper or foil.

2. Brush the salmon fillets with olive oil or melted butter and season lightly with salt and pepper.

3. In a small bowl, mix the panko breadcrumbs, chopped herbs, garlic, lemon zest, a pinch of salt, and a drizzle of olive oil (just enough to make the mixture slightly moist).
Step 4
4. Press the herb mixture onto the tops of the salmon fillets.
Step 5
5. Bake for 12–15 minutes, depending on thickness, until the salmon flakes easily with a fork and the crust is golden.
Step 6
6. Serve with a squeeze of fresh lemon juice.
