Snowflake Matcha Madeleine

Christmas is almost here, time for pretty madeleines for coffee or tea time.
This recipe is based on Dominique Ansell’s recipe. The only modification I made is the amount of matcha powder and use white chocolate for the coating.

115 grunsalted butter
15 grhoney
15 grbrown sugar
100 grsugar
120 grall purpose flour
15 grmatcha powder
½ tspbaking powder
3eggs
at room temperature
½ tspsalt
3eggs
Chocolate coating
Instructions
Step 1
Melt butter, honey, and brown sugar. Set aside
Step 2
Put sugar in a bowl. Sift flour, matcha powder, baking powder and salt in a separate bowl. Mix with sugar.
Step 3
Add eggs into the dry mixture one at a time. Mix until batter is smooth and shiny.
Step 4
Add melted butter and mix until well combined. Pour into a piping bag and let rest in the refrigerator overnight.
Step 5
Preheat the oven to 175C. Pipe batter into the molds and bake for 10 mins. Unmold right after baking.
Step 6
Melt white chcoolate and let cool. Dust the molds cavity with lustre dust. Put the madeleines into the cavity, pushing each one to ensure all sides coated by the white chocolate. Chill in the refrigerator until firm. Unmold and serve.
