300ggolden caster sugar
150glight brown sugar
300gplain flour
100gcocoa powder
2 tspbicarbonate of soda
1 ½ tspbaking powder
½ tspsalt
5eggs
250mlbuttermilk
200mlvegetable oil
2 tspvanilla extract

for the cake
Step 1
Mix all your dry ingredients together. Mix your wet ingredients in a separate bowl. Whisk the wet into the dry and divide equally between three 8" cake pans. Cook at 180c for 30 minutes or when a tooth pick inserted comes out clean.

Step 2
Heat the cream in a pan, until it starts to bubble. Pour this over the chocolate and leave to melt for five minutes. Once the chocolate has melted, stir the mixture until it's all combined. Pop in the fridge for an hour and then use between the layers and the outside of the cake.
Step 3
You can whisk the ganache once its completely cooled and create a lighter icing if you'd like!
