Instructions
Step 1
Add flour, cornstarch, baking soda, salt in mixing bowl. Stir to incorporate by using a whisk.
Step 2
In a separate mixing bowl, add melted butter and sugars. Mix until dissolved using a whisk.
Step 3
Add eggs and vanilla to sugar mixture and mix with a whisk until incorporated. The mixture should resemble a light caramel color.
Step 4
Add the dry ingredients to wet ingredients and fold in with a spatula until fully mixed. Do not over mix. Batter should be shiny and moist.
Step 5
Hand fold in the chocolate. Mini chocolate chips do very well with this recipe. The more the better.
Step 6
Put in the refrigerator for at least 6 hours. Dough needs to be hard for them to cook correctly.
Step 7
Cook on cookie sheet in the oven on convection 300 (type 325). Second from top rack. Cookies are done as soon as the sheen on top is gone. Any longer and the cookies will be overdone.
