Instructions
Step 1
In a large mixing bowl, whisk together the flour, baking powder, salt, black pepper, and smoked paprika.

In a separate bowl, beat the egg and stir in the milk until well combined.

Pour the wet ingredients into the dry ingredients and stir until just combined. The batter should be thick but smooth.

Fold in the corn kernels, green onions, and cheddar cheese (if using) until evenly distributed.
Step 5
Heat about 1/4 inch of vegetable oil in a large skillet over medium heat.
Step 6
Drop spoonfuls of batter into the hot oil, flattening slightly with the back of the spoon. Fry for 2-3 minutes per side, or until golden brown and crispy.
Step 7
Remove the fritters from the skillet and place them on a paper towel-lined plate to drain excess oil.
