Sift the cocoa powder into a large bowl

Add sugar then whisk them together

Add oil, eggs, vanilla, and the coffee. Whisk until it’s a smooth and glossy mixture

Add flour, baking powder, and salt. Using a spatula, fold everything together until a homogenous dough forms. It should be glossy and slightly sticky

Cover the bowl with some clingfilm and leave it in the fridge to chill overnight (minimum of 2hr so the dough is fully cold and easier to shape)

Line a baking tray with parchment and pre-heat the oven to 180°C while we prep the cookie dough

Scoop the cookie dough into 60g balls (this gets you 10 cookies but you can make them bigger or smaller)
Step 9
Shape it into a ball between the palms of your hands then drop it into the bowl of powdered sugar. Toss it around so the entire cookie dough is covered in an even layer of powdered sugar

Transfer them onto the lined baking tray with some space between each dough ball

Pop them into the oven to bake at 180°C for 10-13min

Let it cool on a cooling rack then enjoy!
