Instructions
Step 1
Wash then Finely slice leek
Peel and chop potato into cubes
In pot with oil and butter and leeks with salt, nutmeg and cumin. Sautee till caramelised. Add in potato cubes along with 1:2 ratio of wine to stock, until all bring to boil then simmer until potatoes are cooked. Use handheld mixer to puree into soup.
Add cream until its as desired and mix, add salt and pepper as desired. Good with bread
