Instructions
Step 1
Melt 1 tsp of butter in a heavy small skillet over medium low heat. Add shallots and rosemary and saute until soft, about 4 minutes. Cool to lukewarm.
Step 2
Mix in goat cheese and pepper. Season to taste with salt.
Step 3
Using fingertips, loosen skin of the chicken breasts and spread half of the cheese under each breast. Rub remaining butter over the skin.
Step 4
Preheat oven to 425. Place chicken on small rimmed baking sheet and roast until cooked through, about 25 minutes
