Pork and Cabbage stir fry with crispy fried onions

Instructions

Step 1
In a small pot, combine rice, water, and a pinch of salt.
Step 2
Bring to a boil, then cover and reduce to simmer. Cook until rice is tender. 15-18 minutes
Step 3
Keep covered off heat until ready to serve
Step 4
While rice cooks, trim and thinly slice scallions, separating whites from greens
Step 5
In a small bowl, combine chili sauce, vinegar, sugar and soy
Step 6
Heat a large drizzle of oil in a large pan over medium-high heat

Add scallion whites and cook until just softened, 1 minute
Step 8
Add pork and garlic powder. Season with salt and pepper.
Step 9
Using a spatula, press into an even layer. Cook undisturbed until browned on the bottom 3-4 minutes
Step 10
Break up meat into pieces and continue cooking until pork is cooked through, 1-2 minutes
Step 11
Stir in chili mixture and cook, stirring, until slightly thickened, 1 minute more
Step 12
Stir red cabbage and carrot mix into pan with pork, cook until just tender, 2-3 minutes

Season with salt and pepper
Step 14
Fluff rice with fork and stir in butter until melted
Step 15
Divide rice and top with pork mixture. Garnish with scallion greens and crispy onions
