Instructions

Step 1
Peel and devein shrimp, tails can be on or off as desired
Step 2
In a medium saucepan, boil shrimp until cooked throughly
Step 3
Meanwhile, in another saucepan, bring 2 cups water to a boil. Add quinoa.
Step 4
Reduce heat, simmer covered until water is absorbed. 15 minutes. Remove from heat.
Step 5
Peel oranges and remove white with. Cut oranges into segments.
Step 6
Mix vinegar, olive oil, salt and pepper. Add quinoa and arugula, toss to combine.
Step 7
Top with orange segments and shrimp.
Step 8
Serve.
