500gground chicken

1egg

½ cupbreadcrumbs

2 tablespoonsthai red curry paste

1 tablespoonfish sauce

1 teaspoonginger
grated

1clove garlic
minced

salt
to taste

pepper
to taste

1 tablespooncoconut oil

1onion
finely chopped

1 x 14 ozcan coconut milk

½ cupchicken broth

1 tablespoonlime juice

1 tablespoonbrown sugar

¼ cupcilantro
chopped

¼ cupgreen onions
sliced
Instructions
Step 1
In a large bowl, mix ground chicken, egg, breadcrumbs, Thai red curry paste, fish sauce, ginger, garlic, salt, and pepper until well combined. Form into meatballs.
Step 2
Heat coconut oil in a large skillet over medium heat. Add meatballs and cook until browned on all sides, about 5-7 minutes. Remove meatballs from skillet and set aside.
Step 3
In the same skillet, add onion and sauté until soft. Pour in coconut milk and chicken broth, and bring to a simmer. Stir in lime juice and brown sugar until dissolved.
Step 4
Return meatballs to the skillet. Cover and simmer for about 10 minutes, or until meatballs are cooked through.
Step 5
Garnish with cilantro and green onions before serving.
