Ingredients
4 servings
1 bunchcollard greens
washed and chopped
1 tablespoonolive oil
1onion
small, chopped
2cloves of garlic
minced
¼ teaspoonred pepper flakes
optional
1 tablespoonsapple cider vinegar
salt
to taste
pepper
to taste
Polenta
Instructions
Greens
Step 1
Heat olive oil in a large skillet over medium heat.
Step 2
Add the chopped onion and garlic, cooking until they are softened (about 5 minutes).
Step 3
Add the collard greens and red pepper flakes, if using, and sauté until the greens are wilted and tender (about 10 minutes).
Step 4
Stir in the apple cider vinegar and season with salt and pepper to taste.
Polenta
Step 5
Bring water or low-fat milk and 1/2 teaspoon of salt to a boil in a medium saucepan.
Step 6
Gradually stir in the polenta.
Step 7
Reduce the heat to low and cook, stirring frequently, until the polenta is creamy and thick (about 15-20 minutes).
Step 8
Stir in the Parmesan cheese and herbs, if using.
