Mashed potato cakes

This is such an easy baby led weaning or toddler snack that makes use of your leftover mashed potato. Fry until beautifully golden brown and serve alongside creamy creme fraiche or sour cream, or just a little butter. Perfect for babies and toddlers 6 months +.

Instructions
Step 1
Make potato mix
Add all potato cake ingredients to a bowl and stir to combine
Step 2
Shape cakes
Shape your potato cakes into small disks.
Step 3
Fry
Coat the bottom of a large pan in olive oil and fry for 3 minutes each side, or until golden brown. I did mine in two batches, so not to overcrowd the pan.
Step 4
Serve
Serve as is, or with creme fraiche and chives.
