Ingredients
6 servings
1 Tbsolive oil
1 lbground beef
1onion
diced
2cloves garlic
minced
2 x 14.5 Ozcans diced tomatoes
can be regular or rotel
1 cuprice
1 cupbeef broth
2 tspchili powder
1 tspcumin
2 cupsshredded cheese
cheddar, Monterey jack
salt
to taste
pepper
to taste
2bell peppers
diced
Can of corn
drained
Can of black beans
drained and rinsed
Instructions
Step 1
1. Brown ground beef, onion, and garlic in a large skillet over medium heat until beef has browned.
Step 2
Stir in peppers and cook for 3-4 mins
Step 3
Stir in tomatoes, corn, black beans, rice, beef broth, chili powder, and cumin. Season with salt and pepper to taste. Bring to a boil, cover, and simmer for 20-35 mins.
Step 4
Remove with heat, cover with cheese and let melt before serving
