1 tablespoonunsalted butter

2 x 6 ozsalmon fillets
skin removed

3 clovesgarlic
minced

½ cupdry white wine
or chicken/vegetable broth for a non-alcoholic option

½ cupParmesan cheese
grated, plus extra for garnish

Step 1
Cook the Spaghetti:

• Bring a large pot of salted water to a boil and cook the spaghetti according to package instructions until al dente. Reserve 1 cup of pasta water, then drain.

2. Cook the Salmon:

• Heat olive oil and butter in a large skillet over medium heat.

• Season the salmon fillets with salt and pepper, then cook for 3-4 minutes per side, until golden and fully cooked.

• Remove the salmon from the skillet and set aside. Flake the salmon into bite-sized pieces with a fork.

3. Make the Sauce:

• In the same skillet, add the minced garlic and sauté for 30 seconds until fragrant.

• Deglaze the pan with white wine (or broth), scraping up any browned bits from the bottom. Let it simmer for 2 minutes to reduce slightly.
