Vinaigrette
Instructions
For the Beets
Step 1
Remove all but 2-inches of stem from the beets.
Step 2
Scrub beets well.
Step 3
Place beets on cooking rack of slow cooker.
Step 4
Cover and cook on High for 2½ hours.
Step 5
Cool beets, and once cooled, rub to remove skin.
Step 6
Chill beets whilst preparing salad.
Plating
Step 7
Layer water cress on serving platter.
Step 8
Layer endive on water cress.
Step 9
Top with mound of beets.
Step 10
Sprinkle with pistachios.
Step 11
Drizzle with vinaigrette.
Vinaigrette
Step 12
Place vinegar, mustard,salt and pepper in food processor.
Step 13
Whisk to emulsion.
Step 14
Add oils whilst whisking.
Step 15
Continue whosking until emulsified.
