Instructions
Step 1
145g of sourdough discard
Step 2
330g of warm water
Step 3
6g of instant yeast
Step 4
4g of sugar
Step 5
500g of flour
Step 6
Mix together discard, water, yeast, and sugar. Let rest for about 10 mins.
Step 7
Add flour and salt, mix together.
Step 8
Let rest for 30mins then mix, work the dough in to a smooth ball.
Step 9
Let rise for about 2 hours, don't stretch and folds every 30 min. On the last stretch and hold, but design and let rise 30 min again. Bake in preheated Dutch oven at 425 for 20 mins with lid on, remove lid and bake for another 15-20 mins. And that's it!
