Instructions
Step 1
Mix water, flour, salt and sugar together and let sit for 45 minutes
Step 2
Add starter and mix well with hands
Step 3
Stretch and fold dough 3-4 times over the next two hours
Step 4
Pour the dough out into a lightly floured counter and shape your loaf
Step 5
Place your loaf into a banneton and put in the fridge for 3-4 hours
Step 6
Preheat a Dutch oven to 475f

Step 7
Remove the loaf from the fridge, place onto parchment paper and score the top
Step 8
Place the loaf into the Dutch oven and bake for 30 minutes covered
Step 9
Remove lid and continue baking until internal temp reaches 200-210f
