Instructions
Step 1
Thoroughly pat dry the pork steaks and season both sides with pepper. Do NOT salt the steaks and do NOT add fat to the pan.
Step 2
Starting with a cold non stick pan, place the pork steaks in and set a timer for 2 minutes. Put the pan on high heat and flip at 2 minutes. Cook the second side for 2 minutes then lower the heat.
Step 3
On medium heat, continue flipping the steaks every 2 minutes while the watee escapes the outside and crust develops nice and brown. After a few cycles, test the center of the pork for 135 degrees temperature. This will probably take 6-8 minutes.
Step 4
Pull the steaks out to rest and finish cooking for 5 minutes.
Step 5
Make the pan sauce by deglazing the pan using chicken stock. Scrape up the brown bits then add the butter and the seasonings. Cook for a little while to start to thicken the sauce and incorporate the flavors.
Step 6
Whisk the flour with some water to remove all lumps then add to the sauce, allowing it to cook for another couple minutes to remove the flour taste.
Step 7
Slice the pork steaks and add some sauce on top. Garnish with parsley.
