Instructions

Step 1
Poach Chicken - boil large pot of water and add the chicken. Bring back to boil before reducing to low heat. Simmer, covered for 15 mins or until chicken is cooked through. Shred
Step 2
Combine all the salad ingredients and peanuts
Step 3
Make the dressing by whisking the soy sauce, honey, lemon juice sesame.oils and chilli.
Step 4
Divide salad into four serves and top with chicken. Keep the dressing separate and store in fridge. Dress the salad right before serving.
