Instructions

For Poached Chicken

Step 1
Fill a medium saucepan halfway with water; bring to boil. Add 1 tsp. kosher salt and chicken breasts. Reduce heat and simmer until cooked through, 12 to 15 minutes. Transfer to a plate; cool completely. Shred or chop into pieces.

For Salad

Step 2
Whisk together sour cream, mayonnaise, lemon zest and juice, and curry powder in a bowl. Season with salt and pepper. Add scallions, cilantro, raisins, and chicken; toss to combine.
