Cheesy Rice and Broccoli

This healthier cheesy rice and broccoli uses my homemade Gooey Cheese Sauce, and is dead simple to put together. Just simmer the rice, roast the broccoli, and mix with the sauce. Nice and simple vegetarian meal with still a decent amount of protein for not having any meat

Rice
Broccoli

908gfrozen broccoli
defrosted

59glemon juice

10gpaprika

10gchili powder

10ggarlic powder

10gonion powder

3gsalt
Cheese Sauce
Instructions
Step 1
Add rice, bouillon powder, and water to a medium pot. Cover and bring to a boil over high heat. Reduce to medium, and let simmer for about 20 minutes, until fully cooked and water is absorbed. Set aside



Step 2
Add your broccoli to a bowl, and season with lemon juice, paprika, chili powder, garlic powder, onion powder, and salt. Transfer to a parchment lined cookie sheet, and roast at 400F for about 30 minutes, until tender and lightly charred, set aside







Step 3
In a cold, wide, flat pan, combine together lemon juice and baking soda. Stir until it no longer bubbles


Step 4
Add the milk and cheese to the pan, and melt over medium low heat until smooth and thickened. The sauce should leave ribbons when drizzled down


Step 5

In a large bowl, combine together the rice, broccoli, and cheese sauce. Divide into 4 servings
