Instructions
Step 1
Preheat oven to 180⁰C and line a large oven tray with baking paper.
Step 2
Combine all dry ingredients (except dried fruit) in the tray. It can help to add the floor, cocoa, cinnamon and ginger last and mix these together with your (clean) fingers before mixing with everything else.
Step 3
Pour in oil and vanilla. Mix well.
Step 4
Drizzle honey/maple syrup on top and mix in with a spoon. I like to do a squiggle back and forth across the whole tray - it leads to better clusters.
Step 5
Use the measuring cup or your hands to press the mix down very firmly, then bake in topmost oven rack for 23 minutes.
Step 6
Let cool undisturbed for at least an hour, then use hands to break it up into clumps and add the dried fruit.
Step 7
Store in an airtight container at room temperature for 1-2 weeks.
